Who we are

Pink Moon Collective is founded by Lew and Jooles O’Sullivan — a husband-and-wife team with a shared love of outdoor living, food, and community.

Jooles is an executive chef with years of experience in some of London’s most vibrant kitchens, known for bold, flavourful cooking inspired by Middle Eastern influences and a deep respect for seasonal produce. Lew brings two decades of project management and creative leadership, with a career built on storytelling, building communities, and delivering ambitious projects from idea to launch.

Together, we find our happiest moments outdoors — camping with our kids, gathering friends around firepits, and sharing food made with care. Pink Moon Collective brings that life to others: a gastro-campsite where people eat, stay, and connect in nature.

Our vision is simple: to create a place where hospitality means belonging. A site where restaurant-standard food sits at the heart of the experience, where guests sleep under canvas, wake to birdsong, and share in a community built around fire, flavour, and the land itself.

We choose to work with people who share our values — growers, makers, farmers, artists, and charities — because Pink Moon is more than a campsite. It is a collective.
